Tuna Pasta Bake

This hearty recipe is packed with flavour and nutrients. Get stuck in!

Ingredients

For the sauce:

  • 2 cloves of garlic, finely sliced

  • 1 red chilli, finely sliced

  • 2 tablespoon olive oil

  • 2 tins of plum tomatoes

  • 1 bunch of fresh herbs (like parsley) or 1 tablespoon of dried herbs

  • 200g leafy greens

  • Salt and pepper 


For the bake:

  • 200g pasta

  • 120g grated cheese (e.g. cheddar, feta, mozzarella)

  • Choose 1 option from:

    - 4 sausages, cut into bite size chunks

    - 4 rashers of bacon, cut into small pieces

    - 3 skinned chicken thighs, cut into bite size pieces

    - 200g Mediterranean veggies (pepper, courgette, aubergine, mushrooms), roughly chopped

    - 2 tins of tuna, drained

Preparation

  For the sauce:

  • Prepare the ingredients being used to the stage described in the ingredients list (if using aubergine cut into 2cm cubes). Preheat the oven to 190 ÌŠ C and boil the kettle.

  • Fry the garlic, chilli and aubergine (if using) for 1 minute in 1 tbsp olive oil. Then, add the tomatoes, herbs, leafy greens and season with salt and pepper. 


   Assemble the bake:

  • Cook the pasta following the instructions on the pack. Drain the pasta when it is still a little bit undercooked.

  • If adding meat or Med veg to the dish, fry these first in a pan with 1 tbsp olive oil. Fry until the meat is golden on the outside (not fully cooked) or the veg has softened a little… 

  • Combine your chosen option with the cooked pasta and sauce, mix well & add half of the cheese.

  • Pour your pasta mixture into a deep baking dish, sprinkle over the remaining cheese and bake for 15–20 minutes until bubbling and golden.

Hints and Tips

Other veg you could use: broccoli, cauliflower, red onion & cherry tomatoes.
