30g butter
55g brown sugar
30ml milk
30g peanut butter
1/2 tsp cinnamon
110g oats
75g chocolate chips

Preparation
Line a baking tray with baking paper.Â
Place the butter, sugar, and milk in a small pan over a medium heat. Stir until the butter and sugar dissolve. Bring to the boil for 60 seconds.
Melt in the peanut butter and stir until dissolved.Â
Add the cinnamon and oats. With the pan still over a low heat, stir until the oats have absorbed most of the liquid, and you are left with a thick cookie batter.
Remove from the heat and set aside for a couple of minutes until the mixture is cool enough to handle.Â
Shape the cookies into 8 walnut sized balls and place them on the prepared tray. Use a fork to press them flat.Â
Chill in the fridge for at least 20 minutes to set.
Once the cookies are set, melt the chocolate in a bain-marie or in the microwave. Carefully dip the cookies in the melted chocolate to cover half of them. Return them to the tray to set.
Hints and Tips
The cookies will keep in an airtight container for up to 3 days.Â
Need a nut-butter alternative to the peanut butter? Try almond butter or cashew butter. If you need to go nut-free, try sunflower seed butter or tahini.
Experiment with adding some chopped nuts or dried fruit to add to the flavour and texture!Â
