1 x 400g tin of plum tomatoes
360g salmon or trout fillets
1 tbsp curry paste
1 tbsp lime pickle Â
1 x 400g tin of coconut milk

Preparation
Prepare the fish by removing any skin and checking to make sure there are no bones in it. Do this by running your fingers along the fillet. Remove any bones you find using your fingers.
Chop the fillets into large chunks and leave to one side.
Heat a pan, over medium heat and pour in the tin of tomatoes.
Next, add the curry paste and fry for a few minutes to bring it to life.
Next add the fish, lime pickle and coconut milk. Bring to a simmer and cook for 5 minutes. Try to avoid stirring the pan too much in order to avoid the fish breaking up too much.Â
Taste and season to taste with salt and pepper.
Serve with homemade flatbreads or rice.Â
Hints and Tips
You can swap the fish for any kind of fish that you like. We have chosen salmon or trout here as they are a source of omega-3 so super good for us.
