
Ingredients
For the fajitas:
160g chicken breast, sliced into strips
1 bell pepper, sliced into strips
a handful of broccoli, sliced into small pieces
1 red onion, thinly sliced
1 teaspoon smoked paprika
1 teaspoon ground cumin
a pinch of cayenne pepper (optional)
juice of 1/2 lime
1 tablespoon olive oil
4 tortilla wraps
For the salsa:
1 clove of garlic, finely diced
1/2 tin plum tomatoes
juice of 1/4 of a lime
a small handful of fresh herbs (any you like)
olive oil
salt and black pepper

Preparation
For the Fajita mix:
Prepare the chicken, bell pepper, broccoli, and onion to the size and shape described in the ingredients list and put into a bowl.
Add the rest of the fajita ingredients to the bowl, mix together, and leave to marinate for 30 minutes.
Next, heat a large frying pan on a medium heat, add your fajita mixture and cook until slightly charred and the chicken is cooked.
For the salsa:
Add all of your salsa ingredients to a blender and blend until smooth (or mash with a fork if you don’t have a blender)
Taste and season with salt, pepper, lime juice.
Build your fajitas:
Spread some of your salsa on the tortilla wrap, top with some of your filling, (add some cheese if you like), then roll up and serve!
Hints and Tips
To make your fajitas vegetarian or vegan friendly, try swapping the chicken for tofu, soy, halloumi, paneer or your favourite veg.
For a meat alternative, try swapping the chicken for strips of beef or pork - or why not give prawns a go?
