2 eggs
40g parmesan cheese, grated
150g smoky pancetta
150g spaghetti
1 clove of garlic

Preparation
Add 1 whole egg and 1 egg yolk into a bowl (reserve the extra egg white for something else) and whisk with a fork until fully combined.
Mix the parmesan and black pepper into the egg then leave to one side.
Chop the pancetta into small pieces and start to fry on medium heat until crispy.
In the meantime, boil a pan of salted water and cook the pasta following the instructions on the packet. Leave in the water just before cooked and don’t drain it.
Finely chop a clove of garlic then add to the pan with the pancetta and cook for 1 minute.
Add the pasta to the frying pan with a couple of spoons of pasta water and ensure you have a low heat. Toss the pasta together with the pancetta then turn the heat off.
After 30 seconds, add the egg-cheese mixture and toss through the pasta until you have a glossy creamy coating on the pasta.
 Mix through any cooked green veg if you like and serve!Â
