Fish Goujons, Root Veg Fries & Mushy Peas (Air Fryer Recipe)

You can't beat a chippy tea! Follow this simple airfryer recipe for tasty meal packed with Omega 3 and other goodies...

Ingredients

Root Veg Fries

  • 250g root vegetables, (e.g. sweet  potato, white potato, carrot) 

  • Vegetable/olive oil

  • 1 teaspoon smoked paprika

  • Salt & pepper


Fish Goujons

  • 150g fish fillets

  • 2 tablespoons plain flour

  • 1 egg

  • 80g golden breadcrumbs

  • 1 lemon (zest)

  • Salt and pepper


Mushy Peas

  • 1/2 tin (150g) marrowfat peas

  • 100ml water

  • Salt

  • Black pepper

  • juice of 1/4 lemon

Preparation

For the Fries

  1. Slice the veggies into long 1cm thick strips and toss in a bowl with smoked paprika and ½ tsp salt and drizzle or spray with oil.

  2. Air Fry at 190°C for 15 minutes (shake every 5 minutes or so).


For the Fish Goujons

  1. Cut the fish into long thin strips, no more than 2cm wide.

  2. Prepare 3 plates with each of the ingredients on them: Plate 1: plain flour, Plate 2: egg, cracked and well whisked, Plate 3: breadcrumbs, lemon zest, salt and pepper.

  3. Breadcrumb each piece of fish by following these steps:

    Step 1: coat each piece in flour

    Step 2: then dip each flour-coated piece in egg and let any excess drip off

    Step 3: then coat each egg coated piece in breadcrumbs

  4. Put the breaded fish piece in an airfryer and spray generously with oil.

  5. Air Fry at 180°C for 6 minutes, turn them over and air fry for a final 3 minutes.


For the Mushy Peas

  1. Drain the peas and add to a saucepan with the water.

  2. Heat on a low-medium heat on a hob and bring to a simmer then cook for 5 minutes, stirring regularly (or microwave the peas and water)

  3. Once the water has nearly gone and the peas are easy to squash, add salt, black pepper and lemon juice.

  4. Mash the peas and serve with your fish and chips!

Hints and Tips

Any firm white fish is perfect for goujons - such as cod, haddock or pollock.


Fish contains Omega 3, the benefits of which include: nourishing brain & eye function, reducing risk of  heart disease by reducing triglycerides in blood, balancing hormones.


Add extra flavour to your goujons: try adding seasoning such as parsley or dill, or parmesan cheese to the breadcrumb mixture.


To give your root veg fries more spice, try seasoning them with paprika, smoked paprika, rosemary, oregano, mixed herbs, salt or pepper.
