Ingredients
1 tbsp olive oil
1 red onion, finely diced
2 red peppers, finely diced
1 courgette, chopped into small
chunks
1 small butternut squash, peeled & chopped into small chunks
2 cloves of garlic, finely chopped
1 tablespoon of Ras el Hanout
1 tablespoon of mixed herbs
1 stock cube
200ml hot water
180g couscous

Preparation
Prepare the veg to the stage described in the ingredients list.
Gently fry the onion in a splash of oil in a saucepan on low heat for 5 minutes.
Add the peppers and courgette and cook for 5 minutes.
Stir in the butternut squash, garlic, Ras el Hanout and mixed herbs.
Crumble in the stock cube, add 200ml hot water and leave to simmer, stirring every now and again until the squash is soft and the water has nearly all evaporated.
Meanwhile, put the couscous in a large bowl and cover it with boiled water so that it is 1cm above the height of the couscous.
Cover the bowl with a plate (or cling film) and allow the couscous to completely absorb the water - it will take 10 minutes.
Uncover the couscous, fluff up the grains with a fork then mix in the cooked vegetables and serve.
Hints and Tips
🍽️Season your couscous with salt and pepper before you soak it.
🍑For a sweeter, more authentic Moroccan flavour, stir in some dried fruit such as apricot, sultanas or figs.
