Chicken Caesar Salad

Making salad super tasty and into a balanced meal

100g stale bread (or croutons), cut into chunks

1 sprig of fresh herbs (like rosemary)

200g cooked chicken

small clove of garlic

15g parmesan cheese

1 tablespoon plain Greek-style yoghurt

Juice of a small lemon

1 tablespoon Olive Oil

1 cos or romaine lettuce (or any leafy green lettuce)


  1. Peel and finely chop then mince your garlic into a paste.

  2. Finely grate the parmesan cheese

  3. Mix the garlic, parmesan, yoghurt, lemon juice, olive oil in a bowl until well combined. taste and season with a little salt and black pepper.

  4. Peel the leaves from your lettuce and cut them down to a size you like then mix into the bowl with the yoghurt dressing.

  5. Cut your cooked chicken into the size you would like and mix in with the dressed lettuce.

  6. Now you are ready to serve or store in the fridge ready for lunch at another time or another day.
